What's good?

I've tried a couple, haven't landed on anything yet. Kinda enjoy breaking a pair because it means I have a good reason to try something new....

The HD280s were, actually, I can't remember. But they weren't THE GUYS.

The HD25s were too scoopy, and the top end was really hard to judge. Got quite sibilant at times. Wasn't fair to the source at all.

The current ATH-M50s are cool-ish. Still scoopy, hyped bottom end for sure, but the top end seems pretty alright (even, that is). Still not IDEAL.

What's the go for decent, smooth response, handy headphones?

I like Beyer's closed back cans – if you have the budget maybe check out the DT250?
